Chocolate Lava Mug Muffin

Ingredients:

For muffin:

2 egg whites

1 TBSP cacao powder

2 TBSP coconut flour

1 TSP raw honey

½ TSP baking powder

Dash of water

For topping:

1 TBSP extra virgin coconut oil

1 TBSP cacao powder

1 TSP raw honey

Method:

Get a microwavable mug, add the dry ingredients first and mash them up with a fork or spoon to ensure there are no clumps. Add the wet ingredients and mix well.

Microwave for 1 – 2 minutes.

Mix the cacao powder, coconut oil and honey together to create the chocolate.

Cover with the chocolate, strawberry jam and peanuts.

Chocolate Nut Clusters

Preparation time: 5 minutes

Setting time: 5-10 minutes

Ingredients:

3 TBSP cacao powder

1 TBSP raw honey

4 TBSP extra virgin coconut oil

¼ cup walnuts

¼ cup macadamia nuts

¼ almonds

Method:

Mix the chocolate ingredients together thoroughly then mix the nuts in.

Ensure the mixture is cold enough that the nuts clump together, if they don’t freeze the chocolate for a couple of minutes. Separate this mixture into the patty cups and keep refrigerated.

Caramel Slice

Setting time: 5 minutes

Ingredients

For base

1 cup unsweetened desiccated coconut

1 cup almond meal

2 TBSP melted extra virgin coconut oil

For caramel

3 TBSP of my paleo caramel sauce recipe

2 TBSP coconut butter

For topping

3 TBSP cacao powder

2 TBSP melted extra virgin coconut oil

1 TSP raw honey

1 TBSP coconut butter

Method:

Add the base ingredients together and process them for a few minutes, the mixture will start clumping together.

Form a square shape with the base ingredients.

Mix the caramel ingredients together and smother over the base. Freeze for 5 minutes.

Mix the chocolate ingredients together and cover the caramel layer.

Okay guys I know this isn’t the most appealing thing to look at, but it tastes good, it’s so quick to make and you can add whatever toppings/ add on to make it better.

Banana Coconut Muffins

Preparation time: 10 minutes

Bake time: 20 minutes

Ingredients:

For muffin

½ cup sifted coconut flour

½ TSP baking powder

½ TSP cinnamon

½ TSP nutmeg

3 free range eggs + ½ cup egg whites

2 large bananas

1 TBSP extra virgin coconut oil

1 TBSP raw honey

For topping

1/2 Homemade dark chocolate recipe

1/4 Homemade caramel sauce recipe

Method:

Mix the dry ingredients together thoroughly ensuring there are no clumps in the mixture. Next add the bananas mash them up in the mixture and add the honey and coconut oil.

In a separate bowl whisk the eggs and egg whites, once whisked combine them to the dry mixture.

You can add the mixture to a processor or mix my hand.

Separate between 7 muffin silicone cups and bake at 170 degrees Celsius for 20 minutes, allow to cool.

Top with dark chocolate and caramel sauce

Paleo Caramel Sauce

Makes about 1 cup

Preparation time: 15 minutes

Ingredients:

1 can hardened coconut milk (leave a can refrigerated minimum 4 hours – overnight)

3 TBSP raw honey

4 TBSP water.

¼ TSP Himalayan pink salt

1 TSP vanilla extract

Method:

Bring the water, salt and honey to a boil.

Add the hardened coconut milk and change the temperature to a medium heat and constantly stir the caramel so it doesn’t burn.

After about 10 minutes add the vanilla extract and the mixture should thicken up and be ready.

Eggplant Boats

Preparation time: 10 minutes

Cook time: 1 hour

Ingredients:

600 grams extra lean beef mince

2 eggplants halved

½ TBSP extra virgin coconut oil

½ TSP Himalayan pink salt

1 tomato sliced into 4 pieces

Homemade pizza sauce

Method:

Preheat your oven to 200 degrees Celsius.

Wash the eggplants, cut off the bottoms and tops.

Spoon out the eggplant to make the boats, coat the eggplant boats with the coconut oil and salt and bake in the oven.

Cook the pizza sauce then add the mince and the scooped out eggplant. This should take about 15 – 20 minutes to cook through.

After the eggplant boats have baked for 45 minutes add the mince and top with a sliced tomato.

Bake for another 15 minutes.
